Coconut, Vanilla and Blueberry Chia Pudding

A super healthy breakfast that kept me feeling fuller for longer!


Ingredients:

1/4 cup chia seeds

250ml almond milk

2 tsp pure vanilla extract

1 tbs desiccated coconut

1 tsp organic coconut sugar

Hand full of blueberries

1 tbs sunflower seeds

1 tbs Buckwheat groats

1 tbs shredded coconut

Method:

Combine the chia seeds, almond milk, vanilla extract and desiccated coconut in a bowl and whisk together. Pour into a glass jar or cup, and leave in the fridge for 8hrs or overnight to set.

Once the chia has set, purée most of the blueberries in a blender on high. Leave a few for garnishing. Add the puréed blueberries to the chia pudding, along with the coconut sugar, sunflower seeds, buckwheat groats, shredded coconut and extra blueberries.

Serve!
