A soup I always love having when I visit my Grandma (we call her Mama pronounced Mar-Mar) is her veggie soup. All the kids love it, even my Dad will make it at home from time to time. So years ago I learnt the recipe to make at home too and it’s an easy peasy one that is so simple to make.
1 large zucchini
1 medium sweet potato
1/2 cauliflower head
2 tsp minced garlic
4 white potatoes (I leave skins on)
2 litres water (you can use ready made vegetable stock instead. Skip next step if you do)
2 tbs veggie stock paste
Salt and pepper
Sprinkle of all purpose seasoning
In a big saucepan, pour in water and add the stock paste (or veggie stock if using stock) on a medium heat. Cover and bring to the boil. While waiting for the stock to boil, chop up all veggies into chunks. Once the boil has started turn the heat to simmer and place all veggies in the pot carefully. Add minced garlic, all purpose seasoning, salt and pepper.
Leave covered and to simmer for 1 hour, checking regularly incase you need to add extra water. With a potato masher, mash the soup up into a thicker consistency and serve with a bread stick.
