A yummy healthy snack prepared for our second Bellingen trip! I used a recipe as a guide but have added in extra ingredients for extra deliciousness!
1 cup natural cashews
1 cup pitted dates
1/2 cup shredded coconut
1 tsp vanilla essence
3 tbs peanut butter (I used crunchy)
3 tbs organic cacao powder
1/2 cup dried apricots
100g rice malt syrup
Desicated coconut for rolling in
Method
Place all ingredients into the thermomix or food processor and blitz on a medium to high speed for 30 seconds. I used the thermomix and mixed on speed 6.
Roll into balls and cover with desicated coconut to finish. Store in the fridge.
