Chilli Minestrone

A cold wet winters day stuck inside the house sparked me to get my cook on and make a firey minestrone soup. It was absolutely delicious!


2cups vegetable stock

400g canned tomatoes (drained)

3 celery stalks diced

3 carrots diced

3 potatoes diced

1 onion diced

2 garlic cloves

1tbs ground chilli powder

1tbs garlic powder

1 chicken stock cube

1 cup dried pasta

3 sprigs of Parsley

1 sprig of rosemary



Add vegetable stock, to a large stock pot and bring to boil. Add potatoes, carrots, celery, onion, parsley, rosemary and garlic cloves and let them cook on a low/medium heat for 20 minutes stirring occasionally.

Add ground chilli powder, garlic powder, pepper, stock cube, drained tomatoes and let simmer for 10 minutes.

Add the dried pasta and leave to cook, stirring occasionally on a low/medium heat until pasta is cooked.

Let rest for 5 minutes before serving. Garnish with fresh parsley leaves.
